It’s Sunday and this is my food prep day to stay on track for the week. I get my Almond milk in my shake mixer and fridge that for my #Questprotein shake, 1 less step in the morning on my rush out the door and pack my lunch for the next day. I also put a weeks worth of #QuestNutrition Bars in my purse so I won’t be without for the week or forget to pack them. One other thing I make every Sunday is almond crackers. I am telling you these things are addictive! I ran out of almond flour last week and did not make them and boy did I miss them at lunch time last week. I was putting a batch together and telling my hubby about it and duh??!! it struck me, I need to SHARE this!!!! These are super easy to make and you cannot argue with the calorie count and nutritional value.
1 batch makes 5 servings – 36 calories, 3.7 grams fat, .2 grams carbohydrates (wuh the wuh???)) and .6 grams protein.
You can enjoy them with your tuna salad, reduced fat sliced cheese or whatever dip you like and feel guilt free! This is a MUST! Here is the recipe that I used from http://allrecipes.com/recipe/236763/almond-you-must-be-nuts-crackers :
- 1 Cup Almond Flour
- 2 TBSP finely chopped walnuts
- 1 1/2 tsp flax seed meal
- 1/2 tsp salt
- 2 TBSP water
- 1 1/2 tsp olive oil
Mix all ingredients and roll out with parchment paper on top and bottom. I like them really thin, but you can roll them out to your desired taste. Use a pizza cutter to make cracker size bites and bake at 350 degrees for 12-15 minutes, let cool and then package into five serving size bags! That’s it folks! Thanks “Poppa Bear” for the recipe.
