So I may be a little behind on this whole cauliflower pizza crust thing. It seems like it has been out for awhile, but I had yet to try it. To me it looked like too much work and if you are craving pizza for crying out loud use your cheat meal for it. Quick, side bar….cheat meal, something I take mostly 1 time a week, not always. I do not go crazy and take the whole day as I feel it undoes what I have worked on all week. I can usually tell when I need one, my body tells me ;). Ok back to the pizza crust, yes it does require some steps, but it was really quite easy and turned out great. Good flavor and a nice option if you do not want to use your cheat meal. The recipe I used was adapted from Allrecipes.com.

I input the recipe into the app My Fitness Pal, which I highly recommend to help keep you on track and check yourself daily. I set the recipe to allow for 4 servings, ended up to 86 calories per serving for the crust. By the time I added a low sugar pizza sauce, canadian bacon and a little cheese, 2 slices cost me about 312 calories and it was very satisfying and I was full. There are so many different topping combinations that I think I will try next time. I will make this again for sure! I took some pictures of the process, enjoy!

- Fresh out of the 400 degree oven after 35 minutes. Top with your favorites and back in the oven until toppings warm and cheese has melted.
